From a cool and labour-intensive season, where we benefited from precise canopy management to produce great sparkling Chardonnay fruit. A fastidious and lengthy leaf plucking program and the absence of extreme weather patterns supported Chardonnay development with vivid natural acidity and delicate flavour ripeness, lending perfectly to sparkling wine making. These rare selections were hand harvested from 2 - 11 March.

This release harnesses meticulous méthode traditionnelle techniques to reveal a rich and layered form with a creamy, fine mousse. Delicate acidity unfolds slowly, to showcase structural minerality, culminating in a long, complex and subtly saline finish.

Extended time on tirage lees imparts layers of roasted hazelnuts, honeycomb and toasted brioche, beautifully complementing the Chardonnay notes of baked orchard fruits and zesty lemon peel. Subtle hints of creme brulee and caramalized citrus, derived from base wine ageing in French oak, weave through the core, enhancing its complexity and finesse.
