The Blanc de Blancs journey begins at our Karridale vineyard, south of Margaret River, where the cool mornings are savoured for hand-picking Chardonnay.

Throughout the year, our dedicated vineyard team prepare our vines for harvest to ensure they yield pristine Chardonnay for our Blanc de Blancs. In the weeks leading up to harvest, both vineyard and winemaking teams are working in harmony to achieve precise timing for optimum expression of each fruit parcel. Each block of Chardonnay is harvested by hand as soon as the fruit reaches the delicate balance between acidity, sugars and flavor.

With fruit ripening evenly across our vineyard in late February, a fast-paced week of vintage unfolded at Idée Fixe. It was important for our grape pickers to find every bunch and berry on the vines, due to lower Chardonnay yields in Margaret River this year. The final block of Idée Fixe Chardonnay was picked exactly one week after harvest began.
