This Spring, we celebrated the launch of Idée Fixe Premier Brut at the Vasse Felix restaurant with A Sunday Brunch Obsession. Head Chef Brendan Pratt curated and crafted a contemporary menu of reimagined favourites and treasures from the sea.
The Premier Brut is characterized by notes of citrus blossom, nori, samphire and a persistent palette, which make it the perfect wine pairing with seafood. Looking beyond traditional brunch dishes and approaching with a fresh perspective, Brendan sourced local Australian seafood to match with the minerality and savoury palette of the Premier Brut. The result was an unconventional brunch menu designed to highlight fruit purity and savoury complexity, showcasing that Blanc de Blancs is not merely an aperitif but has the possibility of being a versatile table wine of great proportions, offering opportunities for experimentation.
